Bitter orange marmalade

This is a very special marmalade: it has strips of caramelized bitter orange peel. Made with bitter oranges from Seville, this marmalade provides a great amount of vitamin C.
It is ideal for combining with salads with nuts, Parmesan cheese, and fresh oranges, for preparing a vinaigrette, for making pickled mackerel, or simply on toast with fresh cheese and a slice of lightly smoked salmon. Ingredients Sugar, bitter orange, and lemon juice.

Recommendation

Pork ribs with bitter orange marmalade

1 Cut the tip of 8 bone pork ribs cuted in one piece. We salted and we take out the fat. Smeared with butter.
2 We put them in a placed with an appropriate source and fed into the furnace, first over high heat and then heat it more smooth. Irrigated with cooking sauce and removed from the oven when cooked.
3 Ribs smeared with bitter orange marmalade and fed back into the oven for 5 minutes.
4 Served wrapped in orange and apple slices that we have put in a little butter in a skillet.
5 We served aside bitter orange marmalade.

Vanilla pannacota with bitter orange marmalade

1 Soak 2 gelatine leaves in cold water.
2 Pour 50 ml of milk, 200 m. of cream and 50 grams of sugar in a saucepan.
3 Open a vanilla bean with a knife and scrape the seeds with the tip. Add to milk.
4 Bring the pan to heat and infuse for a few minutes.
5 Remove from heat, remove vanilla bean and mix with the drained gelatin.
6 Put the mixture into a mold and let cool in the refrigerator for several hours until curdled.
7 Unmold the pannacota in a dessert plate and garnish with sour orange marmalade and crispy cashews tile.

Almond citrus salad

1 In a samll bowl, we add 2 tablespoons of bitter orange, vinegar, olive oil, honey, ginger, salt and pepper.
2 In a bowl, add 2 grapefruits in pieces and 2 oranges in pieces, half onion sliced, and the dressing. Set aside for 30 minutes.
3 Line plates with spinach and the fruit blend on top.
4 Just before serving, spinkle with sliced almonds.
