Blackberry jam

This is a classic jam that is highly valued as blackberries are very tasty and healthy. This jam is rich in iron, potassium and calcium.It is perfect for pairing with numerous desserts and dairy products.
It combines with mascarpone mousse or ice cream and fresh blackberries. You can also prepare a sauce to serve with duck, or simply spread it on a blackberry clafoutis.This jam is delicious with cottage cheese or natural yogurt. Ingredients Blackberries, sugar, apple, and lemon juice.


Bicolor mini cake with blackberry jam and Greek yoghurt glaze

1 In a bowl mix 100 g of sugar with 120 ml of soy milk, stir well until sugar begins to dissolve, add 60 ml of sunflower oil and add 1 teaspoon of orange flavoring and 1 teaspoon vanilla extract together with 2 tablespoons of grated coconut. Stir well.
2 Finally add 120 gr of flour sifted with 1 teaspoon of yeast. Mix everything well with the rods until it is a homogeneous mass.
3 Now separate the dough into two halves, one of them we will add 3 or 4 drops of food color magenta
4 We add into the mold for the oven, a spoonful of the mixture without dye and a dye mixture ... so to complete. After with a toothpick we make a circular motion, weaving and the two mixtures.
5 We put in a preheated oven at 180 ° C between 35 and 40 minutes.
6 Once cooked, unmold and let cool on wire rack.
7 We leave the cake in half, fill with blackberry jam and we cover.
8 Now we make a glaze with 2 tablespoons Greek yogurt, a few drops of lemon juice and 4 tablespoons of powdered sugar, mix vigorously with a whisk. We cover the cake with this mixture and garnish to taste.
