Carrot jam

A delicious carrot jam, sweet and nutritious. It is ideal for savory dishes as well as for preparing magnificent desserts.
This carrot jam pairs with Parmesan cheese, and can be used to prepare a vinaigrette for a green asparagus salad, or simply for adding to a chocolate carrot cake. Ingredients Carrots, sugar, water, orange juice, and lemon juice.


Squid with carrot jam

1 Peel and chop 1 onion, put the fire with a little olive oil. When starts to transparent add 2 chopped garlic beans and continue a few more minutes on low heat.
2 Include 30 ml sherry vinegar and 100 ml of lemon juice to the onion, leaving a few minutes to reduce.
3 In the meanwhile, chop the following species: 1 teaspoon of coriander, 1 teaspoon of ground green pepper, 1 small hot pepper, 1 clove and a pinch of salt. Adding them to the pan and let it catch just temperature.
4 Reserve the sauce warm.
5 To make the garlic oil in a mortar with a little salt, chopped parsley and garlic and add olive oil.
6 In the last minute to make 12 grilled squid with a little oil and salt.
7 For presentation, put the squid with the sauce accompanied with carrot jam.
