Wild berry jam

This combination of raspberries, blackberries, blueberries, and strawberries gives us the perfect tart mix. This is a very healthy jam, rich in vitamin C, and with a flavor that combines with numerous dishes, sweet or savory.
It can be used as a sauce base for duck confit by adding it to a meat sauce. Serve it with Comté cheese and hazelnut bread, or simply to accompany a homemade brioche. Ingredients Raspberries, strawberries, sugar, apple, blackberries, red currants, lemon juice, and apple pectin.


Cheesecake with fruits of the forest jam

1 We grind 1 packet of biscuits and mix with butter until it looks like a paste. Spread the paste on the bottom of the mold you'll use, with a spoon for example, and spread to make it a uniform base.
2 Preheat the oven to 200 ° C.
3 Whisk 4 tablespoons of sugar, 12 creamy portion cheeses, 200 g of philadelphia cream cheese and 4 eggs.
4 Add the mixture over the biscuit base and bake until a toothpick clicking comes out clean.
5 Melt a little berry jam to double boiler or microwave to make it more liquid and easier to spread on the cheesecake.

Stuffed French toast with fruit of the forest jam

1 To prepare stuffing, combine in a bowl: 450gr of Ricotta, 200gr of sour cream, 1 tablespoon of brown sugar, 1 teaspoon of grated orange peel, 1/2 teaspoon of cinnamon and 1/4 cup of chopped walnuts.
2 To prepare batter, mix in a bowl: 6 large eggs, 1/2 cup of milk, 1/2 teaspoon grated orange peel, 1 teaspoon orange juice, 1/2 teaspoon of vanilla estract, 1/2 teaspoon ground cinnamon, 1/8 teaspoon grated nutmeg.
3 Cut a pocket through one edge of each bread slice with a serrated knife and fill with stuffing. Dip into batter and fry in a lightly buttered skillet over medium heat until golden.
4 Serve warm fruit of forest jam over the sruffed toast.
