Summer fruit jam

The summer jam is made with berries that only grow during this precious time: strawberries, raspberries, red currants, and blueberries. We preserve the best wild berries so that you can enjoy them all year round. Enjoying this jam during the summer months is a luxury. Likewise, if you are nostalgic of the sun and the sound of cicadas, or if you're already dreaming of a vacation, this is your jam.
It pairs with fresh cheese or goat cheese, or with crepes and butter croissants for breakfast. It can be mixed with frozen yogurt or natural yogurt. On the other hand, you can make a red berry sauce to serve with duck confit, with pork ribs, or with a good steak. Ingredients Sugar, strawberries, raspberries, red currants, blueberries, and lemon juice.


Puff pastry with custard and summer fruit jam

1 In a bowl, mix 120 g of cream cheese, 60 g of powdered sugar, 50 g of almond cream, 1 tablespoon of vanilla and an egg yolk.
2 Cut the pastry in squares 10 cm x 10 cm, as many as you would like to make.
3 Put a little custard in the center and a tablespoon of summer fruit jam.
4 Seal the tips of the square with beaten egg and close the pastries.
5 Finish smearing the pastries with egg.
6 Sprinkle almond slivers on top and put them in the oven, pre-heated to 180º, and let them bake until the pastry is golden brown.

Frozen yogurt with summer fruit jam

1 In a small pot, combine 1 tablespoon of lemon juice with a little water.
2 Pour in one packet of unflavored gelatin and let it set for 5 minutes.
3 Cook on low heat, stirring constantly until the gelatin has completely dissolved.
4 Mix 1 cup of Can Bech summer fruit jam with the yogurt. Beat it until it is a homogenous mixture. Gradually, while beating, add the gelatin.
5 Separately, mix 1/2 cup cream with 3 tablespoons of powdered sugar and add to the previous mixture. Blend well and pour into ice cube trays.
6 Place in the freezer.
7 20 minutes before serving, take the ice cube trays out of the freezer. Let them soften a little bit.
8 Cut into pieces, place in the blender and beat until it is creamy, still thick and very cold.
9 Sirve immediately in individual glasses and decorate with pieces of fruit.
