Winter fruit jam

The winter jam is made with citrus fruits, the predominant fruits of the Mediterranean during this season: oranges, lemons, and limes. It is a citrus jam perfect for remembering the freshness of winter throughout all the year.
This jam combines perfectly to make a vinaigrette for a pear and chestnut salad with cured cheese; or with almond nougat, macadamia nut, or mocha ice cream; or simply as a base for a meat sauce for stuffed turkey or chicken. It is also great for making a vinaigrette to enjoy with mussels or other seafood. Ingredients Sugar, orange, lime, and lemon.

Recommendation

Salmon canape with cream cheese and winter fruit vinaigrette

1 Spread a mixture of cream cheese and a teaspoon of winter fruit jam on a round cracker.
2 Place a strip of smoked salmon on top and finish off by decorating it with chives.

Winter fruit jam muffins

1 Beat 2 eggs with 150 g of sugar until you have a foamy mix.
2 Add 100 ml of fresh cream and 80 ml of oil. Beat again until it is all well-blended.
3 Gradually add 200 g of flour sifted with 1/2 packet of baking powder, 1 teaspoon baking soda and a pinch of salt. Mix well.
4 Add 4 tablespoons of winter fruit jam to the mix. Carefully combine so that the mix is well-blended.
5 Fill the muffin cups with the mix halfway up, more or less, and put them in the pre-heated oven at 180 ºC for 15-20 minutes.
