This jam is made with the Conference and Blanquilla varieties of pears from Girona. It is a very elegant and balanced jam, which combines very well with all types of cheeses.
It can be used to combine with toast and blue cheese, or for preparing a vinaigrette for roast beef, or simply with a chocolate croissant.
