Xató is a popular and traditional sauce from the Garraf and Penedès area, made with toasted almonds and hazelnuts, bread crumbs with vinegar, olive oil, and ñora (dried red pepper). The word "xató" comes from the term "aixetó," which is the little tap that is hammered into the barrel so that new wine can come out of the vessel. This sauce is connected to wine festivities. Nowadays, there is even a gastronomic route in its honor: the Xató Route.
It is perfect for salads with escarole, anchovies, and cod; for grilled vegetables and all types of salads. It can also be eaten with bread sticks for an appetizer.
