Pig’s trotters

Pig’s trotters cooked in a traditional way with vegetables and boned by hand. Then we mould the meat in the form of roll with a high pressure vacuum system, and apply a laminate of very fine cut, carpaccio type.

It is served in individual pack ready to plate and serve, or it is possible to prepare crispy pig’s trotters by marking them on the grill.

Combine with...

Rocket sprouts, pear slices, traditional ‘picada’, and touches of caramelized pepper jam Can Bech. Finish the dish with extra virgin olive oil and salt flakes.

Preparation

1. Remove the carpaccio from the pack.  

2. Open the pack with the frozen product.  

3. Plate the frozen carpaccio, remove the plastic support and wait 10 minutes.  

4. Dressing to taste.

Pig's trotters and salt. May contain traces of fish, mollusks and / or crustaceans.
